Ingredients

  • 1 avocado
  • 1 ripe tomato
  • 1 red onion
  • ½ lemon – squeezed
  • Pinch of mint – to taste

Method

  1. Remove the avocado skin and place in your food processor or bowl, mash up.
  2. Add tomato, onion, lemon and pint of Mint, stir and chill before serving.
  3. Serve with carrot or celery sticks
